Wadi El Natroun holds a unique place in Egyptian agricultural history. According to ancient traditions, during the Flight into Egypt, the Holy Family rested in this valley and drank from Mary’s Well (Bir Mariam), where a freshwater spring bubbled forth in the midst of a mineral-rich salt basin.

The valley is sheltered from coastal humidity yet receives over 3,200 hours of direct sunlight annually. The natural sandy-loam soil provides optimal aeration for sweet potato root expansion, while subterranean Moghra aquifers supply pristine water isolated from surface agricultural runoff.
